4 Tasty Plant Based Breakfast Recipes Under 5 Minutes

I was always on the lookout for simple, easy breakfast ideas when I was working in an office. I'm a chronically late person and I didn't want to make my breakfast planning 30 minutes late instead, you know, of my regular 10. Because my new commute is now from my bed to my "office" (aka my sofa), I still don't want to spend a lot of breakfast creating. I also adopted a more plant-forward diet late, because by 2020 alone I'm on track to age at least 10 years and plant-based eating has been linked to healthy aging.

But what do you think of good, fast breakfasts when you try to cut back on meat and dairy? (Sayonara, BEC sandwich.) I wasn't quite sure — so I've tapped three pros to share their best easy breakfast ideas (as in five minutes or less).

1. Pudding With Chia Seeds

This Creamsicle Chia Seed Pudding from culinary and integrative dietitian Marisa Moore, RDN, take on the nostalgic taste of summer dessert and transforms it into a fiber-packed meal. "Honey is used but the guidelines provide an alternative to making it vegan," she says. (Go without or use an analogous form of agave or maple syrup, in principle.)

Looking for one more option? This Strawberry Chia Pudding from Whitney English Tabaie, RDN, needs just three ingredients and is great for enjoying Twitter doom scrolling during your morning.

The only catch with this dish? Although preparing takes just a few minutes, it takes a few hours to cool down. But with a little bit of planning, you've got to do it in the morning. Take it out of the oven, whisk, and eat.

2. Toast With An Avocado Twist

I know, I know that the avocado toast is an overused millennial punchline at this point. But for plant-based breakfasts, it's clutch — provided you 're careful with your toppings. "Avocado toast with tomatoes and onions on whole-grain toast and sriracha is one of my favors," says bilingual dietitian Dalina Soto RD. As any reasonable person knows, avocado is delicious — and it's also full of vitamin E, a brain-healthy antioxidant a top psychologist says most of us don't get enough of it.

English Tabaie says she likes to top up her avocado toast with protein and omega-3 hemp seeds and pepitas. (Pro tip: This waste-free hack will help you keep it fresh if you don't use your entire avo.)

3. Banana Oatmeal With Peanut Butter

Microwave oats with water or plant milk, a scoop of peanut butter, a mashed banana, and cinnamon are another favorite simple plant-based breakfast Moore's. Quick and simple!

If you want to spend a few more minutes on the oatmeal, try the Superseed Oatmeal from English Tabaie. This contains ground flaxseed seeds and chia seeds, soaking up moisture and adding bulk to your oatmeal to hold you full all day. (Thank you, good fats and fiber!)

4. Green Smoothie

Absent a smoothie, this will not be a good roundup of breakfast. English Tabaie recommends her Anti-Inflammatory Green Smoothie which contains anti-inflammatory ingredients such as spinach, pineapple, and ginger, as the name suggests. Preparing the morning after you got wasted at home while watching Hamilton is a perfect meal, stressed about being single forever, and ended up texting three of your exes. (I don't know your life ... Or anything less specific.)
